Vin de Pays Les Plôs de Baumes

 

GRAPE VARIETIES :

Cabernet sauvignon, cabernet franc et merlot.

 

LAND :

"Les Plos" is the name of a site near Aniane where my maternal grand-father, Marcel Baumes, cultivated vines. On the second terrace above the Hérault river, the well drained soil made up of rolled pebbles is ideally suited to Cabernet Sauvignon, Cabernet Franc and Merlot grapes.

 

VINIFICATION :

Daily lees circulation.

 

MATURING - BOTTLING :

30 months in casks.

 

TASTING :

It results a powerful wine with black fruit and spicy aromas, and a tannin structure which means it can be laid down for a good ten years.

 

GASTRONOMIC SOULMATES :

A superb drink with duck and olives, grilled mullet and morel mushrooms, or partridge salmi.
